Ingredients:
- 12 tbsp (3/4 cup) softened butter
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tbsp toasted marshmallow syrup (optional)
- 2 tsp vanilla paste or extract
- 2 egg yolks (room temperature)
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- Inclusions:
- 1/2 cup green & red M&Ms
- 1/2 cup peppermint bark (chopped)
- 1/2 cup chocolate-covered pretzels (chopped)
- 1 tbsp Christmas sprinkles
Instructions:
Preheat the oven to 350°F (175°C)
In a mixing bowl, combine the softened butter and both sugars. Cream them together using a stand mixer or hand mixer until light and fluffy.
Add the egg yolks, vanilla paste, and toasted marshmallow syrup (if using) to the bowl and mix until smooth and pale.
Then add the all-purpose flour, baking powder, baking soda, and a pinch of salt, mixing until well combined.
Fold in about 90% of your chosen inclusions and scoop the dough onto a parchment-lined baking sheet.
(For bakery-style cookies, add the remaining inclusions on top of the dough before baking)
Bake in the 350 F preheated oven for 10 to 12 minutes.
Once the cookies are baked, remove them from the oven and use a large cookie cutter to circle the edges for evenly shaped cookies. Let cool for at least 5 minutes!
