Ingredients:
- 2 1/2 cups all-purpose flour
- 1 cup butter (2 sticks, room temperature)
- 1 cup granulated sugar
- 1 large egg (room temperature)
- 1 tablespoon vanilla extract
- 1/2 cup cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon espresso powder
- 1 teaspoon peppermint extract
Instructions:
Preheat your oven to 350 F.
In a large bowl, cream the butter and sugar together until smooth, about 1 minute. Then, beat in the vanilla extract, peppermint extract, and egg.
In a separate bowl, combine the cocoa powder, flour, baking powder, and espresso powder. Gradually add this dry mixture to your wet ingredients.
Continue mixing until the dough begins to pull away from the sides of the bowl.
Divide the dough into two sections. Roll out each section on wax paper or another prepared surface to about 1/4 inch thick.
Cut the rolled dough into your desired shapes and bake at 350 degrees for 6 to 7 minutes. Once baked, allow them to cool on the baking sheet.
