Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 ½ cups All-purpose Flour (Sifted)
  • 1 â…• tsp Baking soda (Sifted)
  • 1 tsp Pumpkin Spice
  • 1 Egg (Room temperature )
  • 1 cup Butter (Softened )
  • ¾ cup Brown Sugar
  • ¾ cup Cane Sugar
  • 1 tsp Vanilla Paste
  • 1 ½ cups Old Fashioned Oats
  • ¼ cup Pumpkin Puree ((Measure after straining through a cheese cloth to remove as much moisture as you can))
  • 2 cups Chocolate Chips

Instructions

  • Preheat your oven to 325 F.
  • Mix and sift your dry ingredients (Flour, Baking soda, Pumpkin Spice) in a small bowl.
  • In another bowl, mix softened butter, brown sugar, and cane sugar for about 1 minute, then add in your vanilla paste and mix for another 30 seconds.
  • Once mixed, fold in your dry ingredients and one egg, adding both in batches.
  • Once combined, fold in your oats and chocolate chips, do not overmix.
  • Once the dough is combined, scoop out your cookies onto a baking sheet lined with parchment paper and bake at 325 F for 15 minutes.
  • Note: For bakery style cookies, top your dough with chocolate chips before baking
  • Let them cool for at least 10 minutes before enjoying
