Ingredients
- 1 ½ cups All-purpose Flour (Sifted)
- 1 â…• tsp Baking soda (Sifted)
- 1 tsp Pumpkin Spice
- 1 Egg (Room temperature )
- 1 cup Butter (Softened )
- ¾ cup Brown Sugar
- ¾ cup Cane Sugar
- 1 tsp Vanilla Paste
- 1 ½ cups Old Fashioned Oats
- ¼ cup Pumpkin Puree ((Measure after straining through a cheese cloth to remove as much moisture as you can))
- 2 cups Chocolate Chips
Instructions
- Preheat your oven to 325 F.
- Mix and sift your dry ingredients (Flour, Baking soda, Pumpkin Spice) in a small bowl.
- In another bowl, mix softened butter, brown sugar, and cane sugar for about 1 minute, then add in your vanilla paste and mix for another 30 seconds.
- Once mixed, fold in your dry ingredients and one egg, adding both in batches.
- Once combined, fold in your oats and chocolate chips, do not overmix.
- Once the dough is combined, scoop out your cookies onto a baking sheet lined with parchment paper and bake at 325 F for 15 minutes.
- Note: For bakery style cookies, top your dough with chocolate chips before baking
- Let them cool for at least 10 minutes before enjoying
