I may or may not have had 2-3 bowls of this! It’s comforting and is the perfect meal to fight these winter blues. Welcome to my We Have Food at Home series, where I take y’all grocery shopping and show you what we are having for dinner. Tonight, we are having a craving that has been all over my feed: Chicken Congee. This recipe is easy, quick to prep, and comes together in a simple and comforting way.
If you want to make this at home and share a little comfort with your family, here’s what you’ll need:
Congee:
- 1 cup rice (washed)
- 5 cups water
- 4 cups chicken bone broth
- 3 to 4 garlic cloves (chopped)
- 1 tbsp ginger (chopped)
- Salt to taste
Chicken:
- 3 thinly sliced chicken breasts
- 1 tbsp white pepper
Toppings:
- 2 shallots
- 5 green onions
- 1 tbsp sesame oil
- 3 tbsp olive oil
Instructions:
- Start by measuring out your rice and giving it a good rinse.
- Once your rice is washed, add it to a large pot or Dutch oven with 4 cups of water and 4 cups of bone broth. Let it simmer away on low heat.
- While that’s bubbling, chop up your garlic and ginger, and season your chicken with white pepper. Add everything into the pot and let it all cook together for about an hour on low.
- Check the rice while cooking; if the broth reduces too much, add an additional cup of water.
- Next, prep your toppings by thinly slicing the shallots and green onions.
- Heat a pan with olive oil over medium heat to fry your shallots. When the shallots are fried, let them dry on a paper towel.
- When the congee reaches your desired thickness and creaminess, plate and top with the fried shallots, green onions, and sesame oil.
