Blueberry Biscuits

Ingredients:

Makes 8 biscuits

  • 1 cup all-purpose flour + 1 tbsp (for coating blueberries)
  • 1 tsp baking powder
  • 1/2 cup unsalted butter (cold)
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1/2 cup sugar
  • 1 cup blueberries (frozen)
  • Egg wash: Equal parts water and egg

Instructions:

Preheat the oven to 425°F (220°C).

In a small bowl, coat the frozen blueberries with flour and set aside until you are ready to use.

In a large bowl, whisk together the dry ingredients: all-purpose flour, baking powder, and salt. Grate in the cold butter and use your fingers to work it into the flour mixture until it resembles coarse crumbs.

Pour in the buttermilk and gently fold the ingredients together using a wooden spoon. Once a dough starts to form, carefully fold in the blueberries.

Turn the dough out onto a floured surface. Fold the dough over itself a couple of times and then pat it down into a square shape. Cut the dough into your desired shapes, such as standard biscuit shapes or heart shapes.

Place the cut biscuits onto a parchment-lined baking sheet and brush the tops with egg wash. Bake in the preheated oven for about 15 minutes, or until the tops are golden brown.

Once baked, let the biscuits cool. Enjoy them plain or with a lemon glaze.
