Ingredients:
Parfait
- 1 cup of plain Greek yogurt or yogurt of choice
- 1 tbsp Cascadian Farms Oats & Honey Granola or granola of choice
Berry Compote
- 2 cups frozen mixed berries
- 1 tbsp fresh lemon juice (about 1/2 a lemon)
- 1/4 tbsp honey
- zest of 1 lemon
Note:
- For a sweeter taste, add more honey. For more of a tang or citrus taste, use 2 tbsp of fresh lemon juice (about 1 lemon)
Tools
- 1 Saucepan
- 1 Microplane
Instructions
Berry Compote
- In a saucepan, combine the frozen fruit, lemon juice, lemon zest, and honey.
- Place the saucepan on the stove over low to medium heat for about 5 minutes or until the mixture begins to simmer.
- Once it starts simmering, lightly mash the fruit to release additional juices.
- Remove from heat and let the mixture cool for about 5 minutes before using.
Building Your Parfait:
- Scoop yogurt into a small bowl or cup.
- Top the yogurt with the berry compote.
- Add your choice of granola or additional toppings (fresh fruit, chia seeds, oats, honey, or whipped cream).
- Enjoy!
Meal Prep Instructions:
- Scoop the yogurt of your choice into containers and top with berry compote.
- When you’re ready to enjoy your parfait, add the granola or other toppings to keep them crispy and fresh.
