Blackberry French Toast Bites

This past weekend, I woke up craving one of my comfort breakfast meals: French Toast! I love French Toast but wanted to try something different and make French Toast bites, as I typically can’t finish whole slices of French Toast.

These were delicious. I am typing this now, and I am reminiscing about how delicious this meal was and how it set the mood for a perfect Saturday! Not only was this perfect for brunch, but it also made the best leftovers for the next day.

This is so simple and easy to make. For my bread, I always use at least a day-old stale Challah bread. I find day-old Challah bread to hold the custard the best.

For the custard, I wanted it to pair well with the blackberries and give it more of a floral spring flavor profile; I added 1 tsp of cardamom along with four eggs, 1 tbsp of vanilla extract, 1/3 cup of heavy cream, 1 tbsp of cinnamon, and 1/2 tbsp of maple syrup.

To cut your Challah bread into cubes, first cut it into slices, then cut the slices into cubes for the bites.

Once done, dip your cubes into the custard, let them stay in the custard for about 30 seconds on each side, and then fry in your skillet using 1 tbsp of butter for about 3 minutes on each side.

Enjoy with toppings of your choice. I love mine, which is powdered sugar and blackberries.

  • 1 loaf Challah Bread ((preferably a day old, cut into 1-inch cubes))
  • 4 large Eggs
  • 1 tbsp Vanilla extract
  • cup Heavy cream
  • 1 tbsp Cinnamon
  • 1 tsp Cardamom
  • ½ tbsp Maple syrup
  • 1 tbsp Butter ((For frying) )
Instructions
 
  • Prepare your Challah Bread:
    Cut your Challah bread into 1-inch cubes. Stale bread works best for French toast as it absorbs the egg mixture without becoming too soggy.

  • Make the Custard
    In a mixing bowl, whisk together the eggs, heavy cream, vanilla extract, ground cinnamon, ground cardamon, and maple syrup until well combined.
  • Soak the Challah Cubes:
    Place your Challah cubes one or a few at a time into the custard for about 30 seconds on each side to soak up the custard.
  • Cook the French Toast Bites:
    Heat a large skillet on medium heat and add a tablespoon of butter. Once the skillet is hot, add the soaked challah cubes in a single layer.
  • Cook the French toast bites for about 3 minutes on each side. Then remove the cooked French toast bites from the skillet and place them on a sheet pan lined with paper towls to soak the excess butter.
  • Top with powdered sugar or maple syrup and berries of your choice
